Freeze Portions with Dates

How many times have you found a container in the freezer without knowing what it was or when it was frozen? An organized freezer is a pantry of ready meals; a disorganized one, a drawer of surprises.
Freeze in Portions
Divide food into portions the size you'll use: a single serving for one person, or a family-sized portion. This way, you only thaw what you need.
Always Label
- Write down what it is and the date you froze it.
- Use painter's tape and a marker, or specific freezer labels.
- Place the oldest items at the front.
Do It Safely
- Store food promptly in freezer-safe containers or bags.
- Don't leave it out at room temperature for hours before freezing.
- Leave a little space in containers, as liquids expand when frozen.
- Consult your freezer manufacturer's instructions and official recommendations on storage times.
And for Thawing
The safest method is to transfer the food to the refrigerator in advance, for example, the night before.
